Porchetta---Italy’s Latest Culinary Craze

Blame it on my last week’s Blog.  Since writing about Umbria’s wines I’ve been dreaming about porchetta, the world’s most deliziosa pork sandwich.  I had my first bite in Umbria where it is as common as pizza.  Relatively unknown outside of  central Italy until recently, porchetta is quickly becoming the latest foodie rage.  It’s popping up on sophisticated menu’s from New York to San Francisco---surprising since it’s a very rustic dish, often sold as street food.

What makes porchetta so special?  In Umbria, traditionally the entire pig is gutted and deboned.  Then, it is next stuffed with layers of a carefully arranged mixture that includes pieces of its meat, fat, skin, garlic, fennel and lots of herbs such as rosemary.  All of this is then rolled into a gigantic roast and tied with string.  The porchetta is next roasted on a spit over a wood-burning fire.  (In the scaled-down version, just the pork belly is stuffed, but the process of roasting is the same.)  The dish is so famous in Umbria that there are even porchetta festivals.

For true pork lovers, porchetta will make you forget all about baby-back ribs.  In one mouthwatering bite you have crispy crackling pork skin, the succulent fatty belly and the savory tender loin.  It’s addictive.  In Umbria, you can get your fix in a variety of places, one of which is on the street.  There are vans all over Umbria (often found at the local markets) specially outfitted with rotisseries that sell porchetta sandwiches from a take-out window.   Street food will never be this good again.


There are two spaces available on the Wine-Knows Travel June 2015 tour to Umbria.  While we’ll be staying in a luxurious 7,000 square foot villa, but you can bet that we’ll sneak in opportunities to try porchetta at the area’s outdoor markets.  Thankfully, however, with all of the recent hullaballoo about porchetta, US butchers are becoming more accustomed to people asking for porchetta…so many are offering the fixings to make your own!

  2. Vacaciones en Tarifa, Cádiz siempre son algo especial. La gente que sólo está buscando veranear en un costa de la península va a estar sorprendida que ambiente más especial provée este pequeño pueblo en la provincia gaditana. Aunque hay muchos apartamentos Tarifa playa, aquí todavía no ha llegado el típcico turismo de masas de otros sitios de España. Debido a sus impecables condiciones para el kitesurf y el windsurf, Tarifa Cadiz es un destino para viajeros y deportistas de todo el mundo. Caminando por las calles de nuestro pueblo se puede escuchar idiomas de todo Europa y del mundo.
    Hay mucha gente que visita Tarifa Cadiz para ver el final del cóntinente européo y apreciar unas vistas espectaculeres hacía el otro lado del Estrecho de Gibraltar.
    Pero la gran mayoría son jóvenes y no tan jóvenes que están buscando el viento para practicar o aprender uno de los deportes acuáticos más populares - el kitesurf y el windsurf. Para no tener que ir muy lejo, lo más recomendable y buscado son los apartamentos Tarifa playa. Una terraza con vistas hacía el mar, una piscina en la urbanización y un equipamiento moderno son la base de unas perfectas vacaciones de surf. Por el día salen con los instructores de la escuela de surf para mejorar sus habilidades y por la noche se preparan una barbacoa en el balcón del piso alquilado.
    Quien estaba una vez en Tarifa Cádiz vuelve frequentemente ya que la atmósfera especial de este pueblo y las condiciones ideales para navegar lo hacen único.
    El día de un surfero depende del viento. Si hace Poniente, que sopla del Océano Atlántico, entonces el kitesurfista coge su cometa y su tabla para ir a la playa y suele navegar hasta la tarde, noche. Hay chiringuitos que ofrecen comida y bebida para que no falte de nada. Su orilla favorita es la larguísima Playa de Los Lances donde están localizados también los apartamentos Tarifa playa.
    Por el otro lado el windsurfista está más encantado con el viento del este - el Levante. Para la seguridad de los principiantes de este deporte es recomendable que naveguen en el final de la Bahía de Tarifa Cádiz, donde siempre pueden volver a la orilla. De todas formas las escuelas de windsurf tienen barcos para estar cerca de los alumnos.
    Aparte del deporte en el agua Tarifa, Cadiz ofrece una amplia gama de actividades al aire libre. Mountainbiking, escalada, avistamiento de aves, montar a caballo y mucho más. Entre este tipo de turistas los apartamentos Tarifa playa son igual de populares. Todos quieren tener la preciosa vista al mar y tomar el sol para relajarse.
